Rosewood Baha Mar bolsters culinary offering
Rosewood Baha Mar is launching two new restaurants this month, both of which promise to showcase the finest fresh seafood available in The Bahamas.
Malam Indian Grill & Cellar and Tingum, on the Sand will sit alongside the luxury resort’s existing culinary concepts Costa, The Library and Manor Bar.
Named after a famous seafarer, Malam Indian Grill & Cellar aims to elevate the best of the day’s catch through the use of fragrant spices, rich marinades and the smoky flavours of the tandoor. Typical dishes include:
- Smoked sweet potato chaat with cumin raita
- Tandoori lamb chops with mint chutney
- Bahamian grouper with harra salan and gram flour fritters
- Chocolate watalppam with cashew praline and coconut ice cream
Meanwhile, Tingum, on the Sand is designed to emulate the relaxed and inviting nature of an elevated beach café; taking its name from a local phrase meaning ‘that thing’, it is the property’s first restaurant set directly on the beach. Menu highlights include:
- Tropical conch salad, spiny lobster roll and tuna fish with avocado, jasmine rice, cucumber and radish
- Grilled octopus with paprika potato and ginger aioli
- Local grouper with spinach and apple salad
- Pulled chicken with spicy caramelised tomato sauce and aged cheddar
Both culinary concepts will be helmed by Siddharth Krishna, Executive Chef of Rosewood Baha Mar.
