One Hundred Shoreditch’s cocktail bar Seed Library has joined forces with the London institution Ruben’s Reubens on a culinary collaboration set to launch on 25 January.

The luxury hotel’s watering hole – which is helmed by the award-winning mixologist Ryan Chetiyawardana, or Mr Lyan – will host chef Ruben Dawnay, founder of the cult Brixton smokehouse, for a two month residency beginning this week. Dawnay’s menu will showcase his signature smoking and curing techniques, with an emphasis on punchy flavours resulting in a series of side plates carefully curated to match Seed Library’s lo-fi, analogue drinks programme. Highlights are sure to include pastrami sausage and Reuben spring roll made with salt beef brisket, while smoked cheddar croquettes, candied jalapeños and pickled Paris mushrooms served with togarashi also feature on the list.

Dawnay has declared himself “unbelievably excited” about the collaboration, saying: “Always a treat for me to bring my food north of the river, especially to such a wicked space. A proper hidden gem! Get yourself down there for some bbq bites and banging cocktails.”

Chetiyawardana adds: “We always look to a wide range of sources and places for people who are doing cool stuff, and approaching their work with real passion – it’s the things we look for over having to come from a  certain background or practice, particularly at Seed Library where we’re looking for alternative perspectives. Ruben brings this and so much more – at just 21, he’s already established his own style and managed to gain great traction around South London with his personal takes on a wide range of dishes. We’re super happy to be able to support and collaborate on helping him bring his delicious smoked wares to East London to fit alongside Seed Library’s offering!”
