Notos, the rooftop restaurant at Six Senses Rome, has reopened for summer 2025, revealing a smattering of events and a brand-new menu designed by Executive Chef Fabio Sangiovanni.
A takeover from the team at Six Senses Kyoto kicks things off in June. The limited time collaboration (dates tbc) marks the beginning of a series of gastronomic partnerships celebrating Six Senses’ unique urban restaurant offering across the globe. Exploring flavours and culinary heritage from around the world, the experience is set to be a memorable food-forward event, featuring exquisite state-of-the-art Japanese food that’s elevated by the spellbinding Roman cityscape below.
Meanwhile, the appointment of Fabio Sangiovanni as Executive Chef marks a new chapter for the hotel’s culinary offering, promising guests a tantalising gastronomic journey through Italy. A certified Level II Sommelier, Fabio’s style is deeply inspired by the flavours of his homeland, from Naples to the Amalfi Coast and Campania. His cuisine celebrates the region’s rich ingredients, making use of abundant produce like Friarielli broccoli, Vesuvian Piennolo tomatoes, Cetara anchovies, Annurca apples and Sorrento lemons.
“I strive for perfection without ever losing sight of the joy of cooking,” says the chef. “To me, cooking is an art — a journey of flavours, memories, passion, and a deep bond with my magical homeland.”
A revised cocktail menu and an entertainment programme featuring live music, DJs and additional culinary takeover are also scheduled to unfold throughout summer.
