Surjan Singh to open restaurant at Careys Manor Hotel & SenSpa in New Forest

Careys Manor Hotel & SenSpa in Brockenhurst, New Forest, is set to open Kasi, a contemporary Indian restaurant from chef and TV personality Surjan Singh, also known as Chef Jolly.

The restaurant marks Singh’s first UK opening outside London, following The Great Indian in Finsbury Park and Indian dining projects in Singapore, Kolkata, Doha, the Maldives and aboard Cunard’s Queen Anne.

Named after the ancient name for Varanasi, Kasi takes its culinary inspiration from the cultures and cuisines along the Ganges, from the Himalayas to the Bay of Bengal. The menu combines regional spices, open-fire cooking and traditional techniques with British produce and seasonal ingredients, with some dishes drawing on the rituals and celebrations of the regions along the river.

The 4,349 sq ft restaurant will seat 85, with additional outdoor terrace seating. Interiors by Amit Dixit Design use earthy tones, rich textures, gold detailing and statement lighting, drawing on Indian design references.

Alongside an à la carte menu, Kasi will ofindianfer a traditional thali lunch and three- and five-course tasting menus, with optional wine and cocktail pairings. Dishes will include Hampshire lamb parantha; banana leaf-roasted Rivers Test and Itchen trout with coriander, garlic and curry leaf butter; roasted Wessex Saddleback pork belly with buttered pao buns; and paneer lotus kofta with sundried mint and fennel. These will sit alongside tandoori dishes, biryanis, lentils and breads.

At the same time, it will be firmly connected to its home in the New Forest, making the most of the exceptional produce available locally and across the British Isles,” says Singh. “Careys Manor shares my belief that memorable restaurants are built around warmth, generosity and a real sense of place. I am excited to bring those ideas together at Kasi and to create a restaurant that feels equally welcoming to hotel guests, locals and those travelling to the New Forest especially to eat with us.”

Kasi will be one of three restaurants at Careys Manor Hotel & SenSpa, joining British restaurant, Cambium and Thai restaurant, Zen Garden.
