The Château de Valmer in the heart of the Gulf of Saint-Tropez has reopened with the arrival of Michelin-starred chef Thomas Pezeril.

In the shade of Brazilian pines and centennial Phoenix palms, the property invites guests on a gastronomic journey led by Pezeril, who hails from Sarthe and was formerly Executive Chef at Villa La Coste for Hélène Darroze.

His cuisine, described as sincere and respectful of its ingredients, celebrates terroir, vegetables and local producers, embracing a philosophy centred on seasonality, sustainable fishing and zero waste.

Two dining venues extend the estate’s natural setting. La Palmeraie, Michelin-starred, offers two six-course menus, including a fully vegetarian option, while La Bastide, elegant and bistronomic, showcases the flavours of the land and sea, with an emphasis on sharing and conviviality.

Each plate reflects the chef’s commitment to honouring ingredients, supporting producers and delivering an authentic, generous culinary experience.
