Lyaness at Sea Containers London launches second collaboration-focused menu

Ryan Chetiyawardana, aka Mr Lyan, is set to launch a new cocktail menu at his flagship bar, Lyaness at Sea Containers London.

Collaboration Menu 2.0 is the second in the series, which sets out to question how ideas, processes and approaches to flavour are developed through eleven new cocktails and seven reworked classics. Known for its pioneering approach to cocktail creation, Lyaness prioritises curiosity over convention, and Collaboration Menu 2.0 reflects the team’s ‘carrot, not stick’ philosophy.

Drawing inspiration from a range of multidisciplinary fields beyond the bar, the menu is designed to spark conversation while creating space for the hospitality that defines the experience.

At the centre of Collaboration Menu 2.0 is a ‘collaboration of thought’, where each serve begins with a shift in perspective. Concepts brought forward by the team are deconstructed, reimagined and translated into singular ingredients before their final expression in the glass. The result is a menu rooted in technique, shaped by interpretation through flavour, texture and experience.

Cocktail highlights include Lobster Frappé, a creamy concoction of Courvoisier VSOP cognac, Ceylon arrack, coconut, cucumber and absinthe, and Pink Belly Gimlet Another, made with Hendrick’s gin, carrot salami, aquavit honey and lemon.

“The first menu of the series was very direct,” Chetiyawardana says. “We asked the team to go out and find stories about collaboration, then turn those into ingredients and drinks. With Collaboration 2.0, we were more interested in what we’d learned from that process, and how those stories have shifted the way we think and approach creating drinks – looking at ideas, processes and ways of thinking from different fields, and applying them in our own way. It’s still rooted in stories, but less about individual collaborations, and more about how those perspectives stay with you and influence what you do next.”
