Soleil by Claude returns to The Peninsula London this summer, offering guests lunches, sundowners and dinners in a laid-back rooftop setting high above London’s skyline.
The pop-up will replace two-Michelin-starred Brooklands restaurant on the eighth-floor terrace from Tuesday 14 July to Wednesday 2 September. Conceived by Chef Director Claude Bosi, the menu is infused with Southern European spirit, featuring dishes such as sea bass carpaccio with cucumber and fennel, Galicia beef carpaccio, and carpaccio of summer tomato. Globe artichokes are served with anchovy dressing, and lobster rolls come with Koffman chips. Steamed John Dory, piccata style veal chop and lemony roast chicken is followed by Soleil’s ‘Tarte Tropezienne’, warm Madeleines and a roving ice cream trolley.
Alongside a curated list of Champagne and fizz, cocktails by Brooklands Bar’s James Tamang deliver riffs on the classics. Coconut Negroni which mixes Planteray Cut & Dry Rum with Mancino Rosso Amaranto and bitters infused with rosemary, olives and orange.
“The response to the pop-up’s first year was incredibly rewarding,” says Bosi. “So, reopening felt like a natural progression and an opportunity to evolve the concept, creating something more memorable for our guests. It’s a project we’re very proud of, and we’re delighted to be welcoming people back.”
