Castillo Hotel Son Vida, a Luxury Collection Hotel, has announced the relaunching of its signature restaurant after a complete renovation.
Perched above the rooftops of Palma, Mallorca, within a 13th century estate, the historic property, once visited by Grace Kelly, has unveiled Es Balcó de Son Vida, which aims to revive forgotten Mallorcan dishes.
Led by Chef David Méndez, the restaurant’s ethos is deeply rooted in the island’s heritage while interpreting dishes through a contemporary lens. Seasonality and product purity are key, while formerly well-known Mallorcan recipes are revisited with subtle modernity, respecting their origins while elevating them through technique, texture and presentation.
Local treasures such as Sóller red prawns, Mediterranean bluefin tuna, porc negre and Dentón will feature – sourced responsibly and treated with meticulous care, while the menu follows the rhythm of the island, evolving with the seasons and produce harvested from the hotel’s own garden.
Sustainability remains central to the hotel’s philosophy, with a strong focus on circular economy initiatives that have earned the property a Green Key. Organic waste from the hotel is collected and converted into compost, which is used at the nearby Macià Batle winery to fertilise vines used, among others, for the hotel’s own wine, Cercle. In addition, 1,500 orange trees at Finca Son Genet in Búger are nourished to produce fresh orange juice.
