Martin Brudnizki-designed La Fantaisie has opened its doors, with Dominique Crenn at the helm of food and beverage. The French chef, for whom this is her homecoming, is making her return to France after working in the United States since the 1980s. 

Renowned as the first and currently only female chef to be awarded three Michelin stars in the US, Crenn’s culinary creations centre around local and sustainable produce, while her cuisine at Parisian Le Fantaisie will adopt a zero waste and plastic philosophy. 

Drawing on links between food and nature, the menu at the hotel’s flagship restaurant Golden Poppy ranges from line caught sea bass ceviche with pea milk to leche de tigre, while sweet treats will include the likes of lemon and basil ice cream and orange kakigori. 

Inspired by an antique garden greenhouse, Golden Poppy’s glass roof connects the restaurant to the natural world outside, creating a relaxed space synonymous with Crenn’s restaurant in San Francisco and in keeping with the rest of the hotel’s nature-inspired design.
