Marc Ange designs rooftop restaurant and bar at Waldorf Astoria Beverly Hills

Waldorf Astoria Beverly Hills has unveiled Gemma, a rooftop dining and bar destination with a Pan-Asian culinary approach.

Designed by Marc Ange, the space features bespoke details including striking yellow floor lamps inspired by abstracted Old World European street lanterns. These introduce a vertical counterpoint within the horizontal landscape, creating distinct points of light throughout the rooftop.

Helmed by chef Peleg Miron, the menu draws upon influences from Southeast Asia and the Pacific, resulting in a vibrant, contemporary expression of regional cuisines through a distinctly Californian lens.

Dim sum anchors the offering with elevated interpretations such as Wagyu beef wontons with truffle black vinegar sauce, lobster wontons with chilli ponzu and shrimp har gow. Signature dishes include Thai curry, chicken makhani and Singapore noodles. Meanwhile, a curated raw bar features sashimi, cut rolls and Japanese-inspired starters, including crispy rice with spicy tuna. A selection of premium grilled steaks, subtly infused with Asian influences, rounds out the menu.

Led by Beverage Director Jim Kearns, Gemma’s drinks programme mirrors the menu’s global influence, with cocktails inspired by Asian and tropical destinations and executed with a contemporary approach. A curated selection of Coravin wines by the glass anchors the list, complemented by an expansive rosé offering and a thoughtfully curated sake selection.

The cocktail menu draws on a modern interpretation of tiki culture. Highlights include the Scorpion Bowl, blending Planteray 5 Year and Coruba Jamaican rums with Hennessy Privilege VSOP cognac, Monkey 47 gin, orgeat and passion fruit, and the Watermelon Mirage, a fresher, lighter mix of Planteray 3 Star rum, aloe, watermelon, mint and lime.

“Gemma is a reflection of the places that shaped me across Southeast Asia, Southern California and Hawaii, where food is deeply expressive and meant to be shared,” adds Miron. “Each dish draws from those memories, with the intention of creating a sense of discovery and connection for our guests to experience something transportive yet familiar.”
