Iconic Parisian five-star hotel, Molitor, has announced the appointment of Martin Simolka as the new chef at Brasserie Urbaine. 

Originally from Germany, Simolka has developed his culinary skills in a range of luxury hotels including Hotel Adlon Kempinski in Berlin and Four Seasons Hotel George V and The Peninsula Hotel, both in Paris. 

Bringing with him a wealth of experience in menu development and curating unique dining experiences, Simolka comes to Urban Brasserie at Hotel Molitor with the aim of creating ‘raw and authentic” dishes with a “twist of modernity”. The new menu will be inspired by Paris and based around locally sourced, organic produce. 

“Cooking is about sharing, pleasure and discipline, both with customers and with my team,’ says Simolka. “Working at Molitor is a dream for me. A place rich in culture where the variety of possibilities are endless.”
