Pullman Hotels & Resorts has introduced a chic new skybar and two restaurants to the Pullman Paris Montparnasse, following a four-year renovation.  

The 957-key hotel – which sits within a landmark 1972 skyscraper designed by Pierre Dufau – has been reimagined by the design duo Benjamin Clarens and Yann Martin of CUT Architectures. The refresh includes the addition of three new vibrant F&B concepts to the brand’s flagship venue.

First up is the LA burger brand Umami Burger, which has taken up residence on the second floor of the hotel, marking its debut location in Europe. The space seats up to 280 diners, featuring a bold and colourful interior inspired by Japanese street art, and its menu revolves around the chain’s award-winning burgers, garnished with fresh red tomatoes, tasty American cheese and crunchy gherkins.

The hotel has also added the Italian eatery Fi’lia to its F&B portfolio, focusing on honest, authentic and generous Italian dishes that respect the cycle of the seasons. Here, a meal will begin with crusty focaccia served with olive oil and oregano, followed by a range of authentic pizzas available in classic, green (with kale) or wellness (without gluten) versions, homemade pasta dishes or authentic Italian salads.

Both restaurants are helmed by Chef Rafael Casas, a globetrotter originally from Argentina whose specialities lie in vegetable-based gastronomy and in finding seamless ways to integrate vegan, gluten-free and low­ calorie alternatives into menus.

The pièce de résistance is the 32nd-storey nightlife spot Skybar –  which is being billed as the highest open-air rooftop bar in Paris. Created at the Mondrian hotel in LA, the brand has extended its reach to Miami and the Bahamas, and its new French opening features a cocktail bar, terrace and VIP area that comes with panoramic views of the Eiffel Tower and Parisian skyline. With electric green couches and a soundtrack curated by DJ Fred Viktor, the bar provides the ideal space for sipping sundowners in style.
